To help the mix dissolve easily, I pour into a glass a little warm water, add the cocoa mix and stir until dissolved, then I top off the glass with cold water or cold almond milk or organic milk, to taste. YUM.

Another thing I love about this beverage is that it is good for those of us who want to slim down and remain slim. It has a satiating quality that really helps to curb cravings - and you don't feel treat deprived. I found it really works.

OUR STORY

Our new Warrior Blend Base is a breakthrough recipe strait from the Kitchen Cheetahs Test Kitchens. 

All in one sweep, this recipe greatly improves the texture of plant protein shakes, as well as canceling out any stevia taste issues (chilling the BASE overnight alone helps mitigate objectionable stevia taste ☺️).

Our Chocolate Protein BASE only takes a minute to make, then you have a ready supply of the "BASE" for making tasty & creamy chocolate protein shakes at the drop of a hat! NICE.

By the way - Any flavor of "Warrior Blend" protein powder works well for making this thick and creamy protein BASE, but if 
you want the chocolate version shown here, then you need to use the chocolate flavored "Warrior Blend" protein powder.

Sun Warrior "Warrior Blend" Chocolate Protein BASE:

Put in a VitaMix or other high powered blender:

3 c. cold milk of choice (like almond, coconut, cashew...) *


Start blender on med-low and add:

1 c. Sun Warrior Chocolate flavored "Warrior Blend" protein powder

add the protein powder 1/4 cup at a time.

Add:

1/4 t. lecithin

Put the blender lid on tight and switch to the highest speed and blend until the mixture heats up to the desired temperature (from 118 to 155 degrees F). *

For the smoothest texture, use the tamper that comes with the VitaMix blender and heat to 150 to 155 degrees F.

Pour and scrape the finished BASE into a 1-quart mason jar and refrigerate overnight before using in the Creamy Chocolate Protein Shake recipe below.



Tips: 

* Our favorite combination of milks to use for the BASE are 2 cups almond milk plus 1 c. full fat coconut milk.

** 118 degrees F is for "raw"smoothies - heat up to 155 degrees F for the smoothest texture.

The BASE will be cooked at a low temperature and will be steaming at 150-160 degrees F. Some people find this "cooked" pea protein easier to digest. 

Use an instant read thermometer for more accurate results.



NOTES:

1 cup of this prepared BASE contains 1/4 cup of the Warrior Blend protein powder.

Lecithin is a healthy addition and makes it creamier and smoother. Lecithin is especially good for emulsifying the coconut milk.

Sun Warrior Creamy Chocolate Protein Shake Recipe:

Put in a VitaMix or other high powered blender:

1 c. prepared Chocolate Warrior Blend BASE, well chilled
1 1/2 c. cold almond milk (or other vegan milk of choice)
2 T. coconut milk powder or 1 to 2 T. of your favorite nut butter
2 T. Dutch cocoa powder
2 T. vegetable glycerine
1/4 to 1/2 c. mashed baked sweet potato, yam or banana
1/2 t. real vanilla extract
1/2 t. almond extract
1 pinch cinnamon

Blend everything together on high speed until nice and creamy. 

Garnish with sugar-free chocolate crumbles for added texture and chocolaty flavor and Serve at once.

If you would like a colder, thicker shake, reduce the almond milk called for to only 1 cup and add 4 to 6 ice cubes or cubes of almond milk. Process in the VitaMix to a texture of fine ice crystals.


NOTES: 

The vegetable glycerine is super low on the glycemic scale. Glycerine also enhances athletic performance by preventing dehydration. Cool huh?

The baked mashed yam, sweet potato, or banana both thickens and sweetens the drink and also cancels out the taste of the stevia, which is part of the Sun Warrior protein powder formula.

Easy Sun Warrior Chocolate Pudding (Sugar-Free & Vegan)

Easy Sun Warrior Chocolate Pudding.
Here is the beginning of a series of delicious, sugar-free protein pudding recipes that you can make yourself!


We have been talking about creating delicious tasting protein-packed pudding recipes. We wanted a dessert pudding that is good for us and our families. This recipe is the beginning of these formulations. This pudding recipe is low-carb, sugar-free, gluten-free, corn-free, egg-free, dairy-free, and vegan.

My mom discovered that when you puree and heat the warrior blend protein powder with liquid, it "cooks" up to make a silky smooth creamy pudding that thickens perfectly when chilled. Vegan protein powders are not usually this smooth, it's the "cooking" process in the VitaMix that transforms it. we were thrilled to see that it also thickens up beautifully.

This recipe makes up several servings. We like cooking this way, it cuts down on the daily food prep time. Make up a bunch and get it out of the way. That's how we roll.

This recipe is very easy to make in a VitaMix high-powered blender. VitaMix is famous for being able to cook soups just by the friction caused by it's fast moving blades.

So assemble your ingredients and get ready to enjoy a guilt-free treat for breakfast, lunch, or a quick snack anytime!


Sun Warrior Chocolate Pudding Recipe:

Yield: 8 generous servings.

13.5-ounce can Full Fat coconut milk, plus HOT water to make a total of 3 1/4 cups.
1 c. Sun Warrior brand Chocolate "Warrior Blend" protein powder
1/2 c. white or purple yam or sweet potato that has been baked until soft (remove skins)
1/2 to 1 c. White Lakanto sweetener powder, to taste
1/4 c. coconut oil (deodorized makes a more chocolaty flavor)
2 T. vegetable glycerine or other liquid sweetener
2 T. xylitol (or 2 T more Lakanto)
1/3 to 1/2 c. dutch cocoa powder, to taste
1 to 3 t. black cocoa powder, optional for richer color (we like 3 t.)
2 t. real vanilla extract
1/4 t. almond extract
1/4 t. BioSalt
1 fat pinch of canella powder or ceylon cinnamon
Stevia glycerite, to taste, optional
Real chocolate flavoring, to taste, optional
Coffee flavoring, optional


Method:

Place the 3 1/4 cups liquid (coconut milk plus water) into a VitaMix blender container.Then add the 1 cup protein powder.

Put the VitaMix lid on and blend on medium speed just until combined. Turn off the blender and then scrape down the sides of the blender.

Secure the lid on tightly and process on highest speed until steaming hot and perfectly smooth. The temperature should reach at least 130 degrees F. for the pudding to have the best texture and flavor (don't go over 170 degrees). The friction of the blades heats the liquid after a short time. Measure temperature with a thermometer.

Turn off the VitaMix, remove lid and add the rest of the ingredients to the blender, except for the stevia glycerite and chocolate flavoring, if using.

Place lid tightly on and process on the highest speed until the pudding is steaming hot and smooth. Scrape down the sides as needed (with the blender turned off!). If the mixture gets a little too thick, use the "Tamper" to help it along. You may also add up to 1/4 cup more water (making a total of 3 1/2 c. liquid).

Turn off the VitaMix, Taste the pudding. Add stevia glycerite, a few drops at a time, to taste if you want the pudding sweeter. Add chocolate and coffee flavoring to taste, if you want to.

Give a final blend and taste for balanced flavors.

Portion finished pudding into serving-sized jars and store in the refrigerator. The jars of pudding also freeze well!


To Serve:

A good way to serve this is to top the pudding with sliced or broken bananas and crushed gluten-free pretzels. Pour your favorite cold, milk over top and dig in! Our favorite milks are whole organic milk, almond mylk, coconut/almond mylk, or cashew mylk.


Notes: 

If a less thick pudding is desired, add another 1/4 cup water, to make a total of 3 1/2 cups liquid used This pudding thickens more when chilled due to the coconut oil content. If the chilled pudding turns out thicker than you would like, just stir in a bit more water to suit your individual taste.

We add the canella powder, chocolate flavoring, and the coffee flavoring to the pudding to make the most of the chocolate flavor and to make the least of the pea protein flavor!

A healthy raw chocolate milk recipe - you can even make this sugar-free!

Quick & Raw Chocolate milk 


This delicious & healthy milk can easily be made dairy free, nut-free, sugar-free, low-carb, vegan, paleo, whatever you want. Nice, right?

This is one of my mother's healthy raw food recipes. It is very versatile, and quick to make. Prepare it ahead of time and store it in a quart jar in the fridge, just shake a bit before serving.

You can make this in larger batches once you know how much cocoa and sweetener you like to add.

This is easy to make sugar free, just use erythritol and/or xylitol, then enhance the sweetness with a coupe drops of stevia glycerite. A recipe to make your own stevia glycerite may be found on this blog. It will save you a lot of money to make your own, or use Now brand stevia glycerite.

Our chocolate milk is a much better post-workout option than sugar-laden, commercial chocolate milk! Maybe you heard that the Dairy council made a recommendation last year about chocolate milk as being the ultimate post workout beverage. It was then put on the worst nutritional advice for the year list. Well, fortunately, you get to decide for yourself. I say, have the best of both worlds, and drink this chocolate milk instead...

Kitchen Cheetahs Quick & Raw Chocolate Milk Recipe:

2 c. raw milk or a 50/50 blend of coconut milk & almond milk (or Brazil nut or cashew milk)
2 to 4 T. raw cacao powder (2 T. of this can be raw carob powder), to taste
2 T. (1-oz) baby Thai coconut puree or 1/8th to 1/4th t. guar gum, if more thickness is desired
Golden Lakanto, raw agave or sweetener of choice, to taste
1/2 t. real vanilla extract (or a small piece of vanilla bean)
Raw rice protein powder, to taste (like Sun Warrior brand)


Method:

Blend together in a blender (like a Vitamix). If using a piece of vanilla bean, make sure it is pureed well. Taste for flavor and sweetness and adjust as desired. Serve cold.


Tips:


We like to add protein powder to enhance the nutrition of this beverage.

Recipes for nut milks may be found on this blog. Any combination of nut milks may be used.

You can make up a large batch of nut milk and and freeze part of the batch for later use.

For convenience, you can prepare a large batch of baby coconut puree and freeze it in 1-ounce portions in ice cube trays. Store frozen cubes in freezer-safe containers or freezer storage bags.

Warm Chocolate Filled Fresh FIGS - Fit for a king! Nancy Glazier's 1st official post!

The best thing you'll ever put in your mouth, trust me!

It's Fig Season!

Yesterday morning, Leila and I went to a friends house and picked sun-warmed figs right off the tree. They were so sweet and ripe - little purses filled with crunchy jam. A sweet memory for us.

Even the figs that were starting to dry up a bit on the tree were delicious. Their sweetness concentrates and they start to get wonderfully chewy.

We took our bounty of figs home and melted some of my Lakanto sugar-free chocolate to spoon over the still warm figs. I've never had anything so delicious. The melted chocolate with sugary, crunchy warm figs is amazing.

I found that cutting each fig in half and then making a deep well in each center (with a thumb) to hold more chocolate was the way to go.

Or you can dip the whole fig into the chocolate and just dive in. P.S... Don't wear a white shirt.

It's important to have jammy-soft figs for this treat. If you don't have access to a fig tree, try soaking dried white figs in warm water or apple juice until they are nice and soft. Remove from their soaking liquid - pat dry - and serve them warm with melted chocolate.

Figs have the highest fiber and mineral content of all common fruits, nuts, and vegetables. They also have as much as 1000 times more calcium than other common fruits and are 80% higher in potassium than bananas. They are extremely easy to digest. Few fruits equal a fig (try saying that fast 5 times).

Make your own Dark Chocolate Cherry Almond Clusters

Dark Chocolate Almond Cherry Clusters

We bought these at Costco and loved them. They are very easy to make yourself. I like portioning them out with a mini cookie scoop, they look professionally made that way.

Enjoy the benefits of the antioxidants and protein packed in these little babies.


Almond Cherry Clusters Recipe:

16 ounces sugar-free dark chocolate (like a 72%)
8 to 10 ounces dry-roasted whole almonds (salted is o.k.)
8 to 10 ounces dried TART cherries


Method:

Melt and temper the chocolate.
Stir in the almonds and cherries.
Drop by Tablespoonfuls onto parchment or silicone lined cookie sheets.
Cool in the fridge, in front of a fan, or outside if its cool.
Store airtight once set up.

Makes 2 cookie sheetfuls.

Note: To save money, alter the ratio of almonds to the cherries, to cut costs.
ie. 16-oz chocolate, 12-oz almonds, 8-oz cherries, works well.

Monkey Break Bananas - A fun new way to open up a banana, and sugar-free recipe ideas using them.


Monkey-Break your bananas!
This is a fun post about a way to open and break up a banana without bruising it.

This playful method also keeps the banana from browning and oxidizing so quickly, which is really nice if you want to put the bananas into fruit salad or pies. Most importantly, it's fun to do it this way! Try it, you'll like it.

When my parents lived in beautiful Gardner Montana, a missionary from Samoa came to visit them. This is how this young Samoan ate a banana and my family has been doing it this way ever since.

Now I wonder where the Samoan learned it from...

My mom told me that many island people do eat bananas in this simple, natural way.

We named it Monkey-Break bananas because it seems like a good way for a monkey to do it, seeing that they don't usually carry around pocket knives. Please don't ask about our logic concerning this... Maybe a monkey has actually done this before...

Anyway, Monkey-Break bananas stay fresh much longer than sliced bananas because the cell walls are not smashed during cutting. My parents lived in Fiji for several seasons and they witnessed the Fijians eating bananas in this manner also.


It's not like you don't already know what to do with bananas, but here are some more ideas for you:

You can dip these monkey-break banana strips (or small squares) into gently melted Lakanto Sugar-Free Chocolate and then chill. These can keep 2 to 3 days in the refrigerator... If they last that long!

Try a chocolate banana cream pie (!) with our Sun Warrior Chocolate Protein Pudding. Use only 3 cups total liquid (instead of the 3 1/4 cups) in the pudding recipe so that the pie will be firm enough to slice.) Now we're talkin'...

Serve the broken up bananas over top a bowl of Sun Warrior Chocolate Protein Pudding and pour over some milk (dairy or nondairy). Our favorite nondairy milk is BLUE DIAMOND "Almond Breeze" Almond/Coconut Milk blend (unsweetened!). Look for it in the dairy cooler.

Serve the Monkey-Break bananas with your favorite whipped topping - dairy or nondairy. You can top with crushed gluten-free pretzels if you want... Oh yeah.

Kitchen Cheetah Strikes Again!

My mother is a Kitchen Cheetah, I tell you! 
I can't keep up with her. 

She is coming out with so many recipes so fast, it's like rapid machine gun fire. A machine gun that shoots marshmallows, that is. This is why this blog is called Kitchen Cheetahs. She cooks faster than I can type. That may not be saying much, if you have seen me type. I'm an Artist - Not a Typist!

My grandpa was one of the fastest typists in the land and I did not inherit his gift. He has since passed on to the next life. I think he should come back and be my ghost writer!

Easy Chocolate Cream Cheese Frosting (SUGAR-FREE)

Use this yummy and original frosting recipe on our low-carb mug cakes or anywhere else you choose. This is a healthy, sugar-free option that is much lower in carbs than regular frosting.

This easy to make frosting is a great choice for low-sugar, low-carb desserts. You can even make this dairy-free if you use a vegan cream cheese.You get healthy fats from the coconut oil too.

Easy Sugar-Free Cream Cheese Chocolate Frosting



EASY CHOCOLATE CREAM CHEESE FROSTING Recipe:

2 c. FINELY powdered erythritol or white Lakanto zero-cal sweetener (can use part xylitol)
1/2 c. room temperature coconut oil (not melted)

Cream together several minutes. then cream in:

1 package chilled LIGHT cream cheese (or vegan cream cheese)

Cream in. Then add:

6 to 8 T. Dutch cocoa powder (sifted and free of lumps) (Natural cocoa doe not taste as good)

Cream in. Then add alternately:

4 to 6 T. "FROSTING THICKENER" (see recipe below)
1/4 c. vegetable glycerine (or raw honey, or agave, or maple syrup - NOT SUGAR-FREE)

Cream together well. then add:

Real vanilla extract, to taste
Homemade stevia glycerite, to taste (recipe on this blog)

Cream together to blend in very well. Taste for flavor and sweetness. 
Use immediately or chill.



FROSTING THICKENER FORMULA:

1/4 c. arrowroot or tapioca starch
2 T. coconut flour


METHOD:

Grind the starch and coconut flour together 2 to 3 times (letting it cool down between grindings) in a Krups seed mill until it is as fine as possible. 

Store in an air-tight container in your pantry. Use to thicken healthy frostings.

Flax Pumpkin Pie Nuggets for Health Nuts - High-Fiber, Sugar-Free, Grain-Free (with Vegan option)

This is a strange little cookie. That being said, my daughter and I eat them all the time. 

Flax Pumpkin Pie nuggets for Health Nuts

My recipe uses flax meal instead of flour, which gives these more of a pumpkin pie-like texture inside. You do taste the flax, although it is tempered by the use of the spices and almond extract. These cookies are not overly sweet either, but the chocolate chips totally save the day.

These little nuggets are best eaten warm. Then the chocolate is all oozy and delicious. This is why we warm them up for a few seconds before eating them. There is no sugar to preserve these cookies, so they must be stored in the fridge.

Why do we eat these nuggets? They are super healthy (and we are health nuts in this house). These are basically all fiber. I will eat a few of these for breakfast or a snack and they fill me up if I drink a healthy dose of water with them. These are fabulous for helping your blood sugar levels stay even, again, thank all the fiber for that. I add the protein because, well, I wanted protein in them too!

These cookies have helped me when I have set my mind to slim down a bit. They are ready for any snack attacks if I have them at the ready in my fridge. It doesn't take much time at all to bake up a new batch when we are out either.

If you hate eating flax, you may see these cookies as an improvement for flax, or you may not.

I say, live on the edge and make yourself a half-batch, and see how it goes. Warning: They grow on you (not like a fungus though).


Flax Pumpkin Pie Nuggets

1 29-0z can plain pumpkin puree
1 large egg (can omit for vegan)
1 t. real vanilla extract
1/2 t. almond extract
3/4 t. stevia glycerite
1/2 c. erythritol
1 t. sea salt or BioSalt
3 t. pumpkin pie spice
1/2 t. ground cinnamon
1/2 t. ground cloves
1 t. psyllium husk powder
1 c. plain whey protein isolate (or vegan protein powder)
2 1/2 c. freshly ground flax meal
1 1/2 c. semi-sweet chocolate chips (sugar-free or regular)


Method:

Preheat your oven to 350 F. Line 2 cookie sheets with silicone liners and set aside.

In a medium sized mixing bowl, combine by hand, the canned pumpkin with the other wet ingredients.

Add the eythritol, salt, spices, and psyllium husk powder and mix together very well.

Add the flax meal and combine until uniform.

Stir in the chocolate chips.

Portion dough using about a 1 tablespoon sized ice cream scoop. Place close together onto the cookie sheets (the dough does not spread).

Bake for 12 minutes. the outsides will be set but the insides will remain very soft.

Remove from oven and let cool completely on the cookie sheets.

When cooled, transfer to air-tight containers and store in the refrigerator.

To serve: Place a few nuggets into a plate and microwave them 20 to 30 seconds.

Me, contemplating...

I thought about having a "NICE" blog (Kitchen Cheetahs) and a separate "NAUGHTY" blog for the OTHER recipes. You know the ones...sinfully delicious, hopelessly tempting, sugar-laden... foods on most people's NO-FLY-ZONE list.

Well, You get to make your own food decisions. I'm not here to tell you what to do.

After much contemplating, I decided I want all our treasured recipes on one blog. I trust you can sort through this growing recipe collection and find what fits you best at this time. And times change. Our dietary choices evolve as we do.

This food lifestyle blog has something for everyone at any stage of life.

I have noticed in my almost 2 months of blogging on Kitchen Cheetahs, that people are looking more at the traditional and familiar recipes than they are at the 'healthiest' raw food ones. My recent posts for my BEST Easy Spaghetti Sauce recipe and my Copy-Cat Costco Rotisserie Chicken Salad recipe are good examples of this.

It also appears that 'healthified' versions of favorite familiar recipes are great as long as they don't cross over the line of being too weird tasting (as in, don't call carob chocolate).

I get it. Our comfort foods are the foods we were raised on, not that we don't ever get adventurous with our palate, we do. It's just that we generally get cravings for those foods from our childhood, something to think about as we are feeding our own young and growing children.


My daughter who has learned to eat healthy from a very young age.


I believe there is a time and a place for everything.

I also believe in moderation in all things.

I feel that if I take great care of my body on a daily basis, there is room in my life for an occasional piece of Texas Sheet Cake, chocolate mousse, buttery garlic Parmesan bread twists, or chocolate chip cookies, real ones.

I am fortunate in that I do not have any allergies to foods or otherwise. I am blessed with good health and I am very grateful for it. I choose to educate myself and live a healthful life. It has been my personal decision to occasionally partake of those foods some people label as evil or fattening. I decided not to feel bad about that.

 I do not think it is healthy to lay guilt trips on yourself. 

Make your choice and then ENJOY your choice.

There is to be joy in life.

If you decide the choice you made doesn't work, make another choice.

  Choose wisely.
